This soup was inspired by French cassoulet, a rich, slow-cooked stew, born in the sunny, Southern French countryside. This streamlined version uses fewer ingredients and is made in the microwave, so it cooks faster and has fewer dishes to clean.

Preparation
  1. In Round Steamer, combine seasoning with chicken. Cover and microwave on high 6–7 min, or until chicken is cooked through. Use Ground Meat Separator to break up chunks.  
  2. Carefully stir in beans, tomatoes, broth, and veggies—the Steamer will be full! For easier handling, place Steamer on a large plate. Cover Steamer and microwave on high 6–7 min, or until soup is hot and veggies are soft. 
Perfectly Balance Your Plate

Serve with a small, whole-wheat dinner roll and 2 cups leafy greens with 1 tbsp Epicure Dressing.
